Chengdu Stir-fry Shredded Carrot

Ingredients:

– 9 oz. carrot
– 2 t. salt
– 2 t. chili oil
– 1 t. chopped coriander
– 1 t. garlic (shredded)
– 1 t. vinegar
– 2 t. vegetable oil

Directions:

– Peel the carrots and cut them into shreds.
– Mix the coriander, garlic, salt and vinegar together in a bowl.
– Heat oil, stir-fry the carrots, add chili oil, and mix it all together. Then add the mixture from the second step and stir-fry 5 seconds. Serve and enjoy!
